A humble reminder.

More than twenty people told us that we wouldn’t open on time. As someone who looks at just about everything with a “glass half full” mindset, this didn’t detract me from pushing for an opening date. March 16, 2019 — that was going to be it. I could tell that my partner Zack was a little skeptical but he got on board with the timeline and we ran with it, sharing it with as many people as we could over a few month period.

Well, now it’s April 7th and we still don’t have our certificate of occupancy (the notorious CO); a little document certifying a building's compliance with applicable building codes/laws, and indicating it to be in a condition suitable for occupancy.

This was a lesson we needed to learn first hand. There is so much more involved in bringing something like this to life. We now have the foreknowledge that opening a restaurant is just an abstract thing; one that cannot be properly projected, especially in the historic district of a city like Roswell, Georgia.

Were we ready on March 16th? Heck no. So much has happened since then that has solidified the concept, space and vision. At this point I can’t even IMAGINE if we HAD opened then! Today is a day to be thankful that some things don’t work out according to plan.
